Homemade Granola, for the soul…
I am an absolute sucker for a good granola with yoghurt and fruit - for breakfast, as a snack or just because your soul yearns for it… But one thing that frustrates me endlessly, is the lack of GOOD QUALITY granola that’s available to us to buy. The ones in the super market are often filled with simple sugars, seed oils and all other kinds of ingredients that we don’t find in the wild… That’s why I often opt to make my own. It’s a super simple recipe and oftentimes, you’ll already have the ingredients in your pantry - making it way more affordable (and tasty) than those we can find in store.
This is definitely another one of those recipes where you can ‘choose your own journey’, using your complete autonomy with deciding what delicious additions you want in your granola. You can also make this a gluten free option by using rice flakes as your base instead of oats. This recipe is also extremely easy to make larger batches of - this batch serves 1-2 people over a 2 week period.
Granola Recipe
2 cups of Rolled Oats
1.5 cups of chopped nuts/seeds (I like almonds, walnuts, activated buckwheat kernals, pepitas and sunflower seeds)
1/2 cup of sweetener of choice (I like using honey but maple syrup works too)
1 cup of coconut (liquid) or olive oil
1/2 cup of chopped dried fruit (I usually use cranberries or gojis)
A good pinch of salt
1 teaspoon of cinnamon (Ceylon) powder
1 teaspoon of Cacao powder (optional)
Method
Preheat oven to 180C.
Mix oats, nuts/seeds, cinnamon, cacao (if using) and salt in a mixing bowl. Once combined mix in oil and sweetener of choice - stir until all coated.
Lay mix in a single layer on baking tray (lined with baking paper) and bake in oven for 20-25minutes (stirring half way).
Watch to see once the nuts start turning brown- overcooking these can leave a bitter flavour to your granola.
Once cooked, allow to completely cool, top with dried fruit and scrape granola with spoon or hands to break up. You can make it as chunky as you like. Store in airtight container for up to 2 weeks!
